Tilapia Tacos with Cabbage Slaw

  1. Season the tilapia fillets with the taco seasoning.
  2. Heat the olive oil in a skillet over medium heat. Add the tilapia and cook for 4-5 minutes on each side, until the fish is cooked through and easily flakes with a fork.
  3. While the fish is cooking, make the cabbage slaw. In a large bowl, combine the shredded cabbage, chopped cilantro, lime juice, and salt and pepper. Toss to combine.
  4. Warm the corn tortillas in a dry skillet over medium heat, until they are soft and pliable.
  5. To assemble the tacos, place a scoop of cabbage slaw on each tortilla. Top with a piece of cooked tilapia.
  6. Serve the tacos with extra lime wedges and cilantro on the side.
