Tarte aux Poires
Tarte aux Poires is a classic French pear tart made with a buttery crust, almond cream filling, and fresh pears.
Ingredients - Serves 8
- Powdered sugar - For dusting
- Sliced almonds - 2 tablespoons
- Apricot jam - 2 tablespoons
- Pears - 4, ripe but firm
- Vanilla extract - 1 teaspoon

- Almond flour - 1 cup
- Granulated sugar - 1/2 cup
- Butter - 1/2 cup, softened
- Pâte brisée (shortcrust pastry) - 1 sheet
Let's Get Started
- Preheat the oven to 375°F (190°C).
- Roll out the Pâte Brisée and line a tart pan with it. Trim any excess dough.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the almond flour, eggs, and vanilla extract to the butter mixture. Mix until well combined.
- Spread the almond cream filling evenly over the tart crust.
- Peel and core the pears, then slice them thinly. Arrange the pear slices on top of the almond cream filling.
- Bake the tart in the preheated oven for 35-40 minutes, or until the crust is golden and the filling is set.
- While the tart is still warm, brush the top with apricot jam to give it a glossy finish.
- Sprinkle sliced almonds over the tart.
- Allow the tart to cool completely before serving.
- Dust with powdered sugar before serving.
