Tangpyeongchae
Tangpyeongchae is a traditional Korean salad made with glass noodles, vegetables, and a tangy dressing.
Ingredients - Serves 4
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Sugar - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Sesame seeds - 1 tablespoon
- Green onion - 2 stalks
- Radish - 1
- Carrot - 1
- Cucumber - 1
- Glass noodles - 100g
Let's Get Started
- Cook the glass noodles according to the package instructions. Drain and rinse with cold water.
- Julienne the cucumber, carrot, and radish into thin strips.
- Slice the green onions into small pieces.
- In a large bowl, combine the cooked glass noodles, julienned vegetables, and green onions.
- In a separate small bowl, whisk together the soy sauce, rice vinegar, sugar, salt, and sesame oil to make the dressing.
- Pour the dressing over the noodle and vegetable mixture and toss well to combine.
- Garnish with sesame seeds.
- Chill in the refrigerator for at least 30 minutes before serving.
