Ingredients - Serves 4

Let's Get Started

  1. Wash the rice thoroughly until the water runs clear.
  2. In a large pot, bring 4 cups of water to a boil. Add salt and rice to the boiling water.
  3. Cook the rice on medium heat for about 5 minutes, stirring occasionally.
  4. In a small bowl, dissolve saffron threads in 2 tablespoons of hot water.
  5. Drain the rice and rinse it with cold water to stop the cooking process.
  6. In the same pot, melt butter over low heat. Add the saffron mixture and mix well.
  7. Spread a thin layer of the butter-saffron mixture on the bottom of the pot.
  8. Add the rice back into the pot, forming a pyramid shape.
  9. Using the handle of a wooden spoon, make several holes in the rice to allow steam to escape.
  10. Cover the pot with a clean kitchen towel and then with a tight-fitting lid.
  11. Cook the rice on low heat for 30-35 minutes, or until a golden crust forms at the bottom (tahdig).
  12. Remove the pot from heat and let it rest for 5 minutes.
  13. Gently remove the tahdig by flipping the pot onto a serving platter.
  14. Serve the tahdig with the fluffy rice on top.
  15. Enjoy the crispy and flavorful tahdig!
