Tahdig
Tahdig is a crispy Persian rice dish with a golden crust.
Ingredients - Serves 4
- Salt - 1 teaspoon
- Water - 4 cups
- Saffron threads - 1/2 teaspoon
- Butter - 4 tablespoons
- Basmati rice - 2 cups
Let's Get Started
- Wash the rice thoroughly until the water runs clear.
- In a large pot, bring 4 cups of water to a boil. Add salt and rice to the boiling water.
- Cook the rice on medium heat for about 5 minutes, stirring occasionally.
- In a small bowl, dissolve saffron threads in 2 tablespoons of hot water.
- Drain the rice and rinse it with cold water to stop the cooking process.
- In the same pot, melt butter over low heat. Add the saffron mixture and mix well.
- Spread a thin layer of the butter-saffron mixture on the bottom of the pot.
- Add the rice back into the pot, forming a pyramid shape.
- Using the handle of a wooden spoon, make several holes in the rice to allow steam to escape.
- Cover the pot with a clean kitchen towel and then with a tight-fitting lid.
- Cook the rice on low heat for 30-35 minutes, or until a golden crust forms at the bottom (tahdig).
- Remove the pot from heat and let it rest for 5 minutes.
- Gently remove the tahdig by flipping the pot onto a serving platter.
- Serve the tahdig with the fluffy rice on top.
