Tagine Djaj Bzitoun

Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh cilantro - 1/4 cup, chopped
- Chicken broth - 2 cups
- Ground cinnamon - 1/2 teaspoon
- Ground turmeric - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Lemon - 1, juiced
- Garlic - 4 cloves, minced
- Green olives - 1 cup, pitted
- Chicken thighs - 8, bone-in and skin-on
Let's Get Started
- Season the chicken thighs with salt, pepper, cumin, coriander, turmeric, and cinnamon.
- Heat a large tagine or Dutch oven over medium heat. Add the chicken and cook until browned on all sides.
- Add the garlic and cook until fragrant.
- Add the chicken broth, lemon juice, and olives. Bring to a simmer.
- Cover the tagine and reduce the heat to low. Cook for 45 minutes, or until the chicken is tender and cooked through.
- Sprinkle with fresh cilantro before serving.
