Stir Fried Edamame and Vegetables
A healthy and delicious stir-fry recipe packed with edamame and fresh vegetables.
Ingredients - Serves 4
- Salt and pepper - To taste
- Vegetable oil - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Bell peppers - 2, thinly sliced
- Carrots - 2, thinly sliced
- Edamame - 2 cups, shelled
Let's Get Started
- Heat the vegetable oil in a large pan over medium heat.
- Add the garlic and cook until fragrant, about 1 minute.
- Add the carrots and bell peppers and stir-fry for 5 minutes, or until the vegetables are tender.
- Add the edamame and cook for another 2 minutes.
- Stir in the soy sauce and sesame oil, and season with salt and pepper.
- Cook for another 2 minutes, stirring constantly, until everything is well combined and heated through.
- Serve hot.
