Steamed Mussels with Chorizo
This delicious dish combines fresh mussels with flavorful chorizo sausage in a steaming broth.
Ingredients - Serves 4
- Crusty bread - For serving
- Lemon wedges - For serving
- Parsley - 2 tablespoons, chopped
- Chicken broth - 1 cup
- White wine - 1 cup
- Tomatoes - 2, diced
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Chorizo sausage - 6 ounces, sliced
- Mussels - 2 pounds, cleaned and debearded
Let's Get Started
- Heat a large pot or Dutch oven over medium heat.
- Add the chorizo sausage and cook until browned and crispy, about 5 minutes. Remove from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent, about 3 minutes.
- Add the diced tomatoes, white wine, and chicken broth to the pot. Bring to a simmer.
- Add the cleaned mussels to the pot and cover with a lid. Steam for 5-7 minutes, or until the mussels have opened.
- Remove any unopened mussels from the pot.
- Stir in the cooked chorizo sausage and chopped parsley.
- Serve the steamed mussels with chorizo in bowls, with lemon wedges and crusty bread on the side.
