Steamed Mussels with Chorizo

Ingredients - Serves 4

Let's Get Started

  1. Heat a large pot or Dutch oven over medium heat.
  2. Add the chorizo sausage and cook until browned and crispy, about 5 minutes. Remove from the pot and set aside.
  3. In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent, about 3 minutes.
  4. Add the diced tomatoes, white wine, and chicken broth to the pot. Bring to a simmer.
  5. Add the cleaned mussels to the pot and cover with a lid. Steam for 5-7 minutes, or until the mussels have opened.
  6. Remove any unopened mussels from the pot.
  7. Stir in the cooked chorizo sausage and chopped parsley.
  8. Serve the steamed mussels with chorizo in bowls, with lemon wedges and crusty bread on the side.
