Moroccan Shakshuka
Moroccan Shakshuka is a flavorful and hearty dish made with poached eggs in a spiced tomato sauce.
Ingredients - Serves 2
- Crusty bread - 4 slices, toasted
- Feta cheese - 1/4 cup, crumbled
- Fresh cilantro - 2 tablespoons, chopped
- Eggs - 4
- Salt and pepper - To taste
- Crushed tomatoes - 1 can (14 oz)
- Cayenne pepper - 1/4 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and diced red bell pepper. Cook until softened, about 5 minutes.
- Add minced garlic, cumin, paprika, and cayenne pepper. Cook for another minute.
- Pour in the crushed tomatoes and season with salt and pepper. Simmer for 10 minutes.
- Create small wells in the tomato sauce and crack the eggs into each well.
- Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your liking.
- Sprinkle chopped cilantro and crumbled feta cheese over the shakshuka.
- Serve hot with toasted crusty bread.
