Spinach and Goat Cheese Stuffed Pork Loin

  1. Preheat the oven to 375°F.
  2. Butterfly the pork loin by making a lengthwise cut down the center, without cutting all the way through.
  3. Open up the pork loin and flatten it with a meat mallet until it is an even thickness.
  4. In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.
  5. Add the chopped spinach to the skillet and cook until wilted. Remove from heat.
  6. In a bowl, combine the cooked spinach, goat cheese, salt, pepper, dried thyme, and paprika. Mix well.
  7. Spread the spinach and goat cheese mixture evenly over the flattened pork loin.
  8. Roll up the pork loin tightly and secure with kitchen twine.
  9. Place the stuffed pork loin in a roasting pan and pour the chicken broth over it.
  10. Season the pork loin with salt, pepper, and additional dried thyme.
  11. Roast in the preheated oven for 45-50 minutes, or until the internal temperature reaches 145°F.
  12. Remove from the oven and let the pork loin rest for 10 minutes before slicing.
  13. Slice the stuffed pork loin and serve with the pan juices.
