This spicy tofu stew is a flavorful and comforting Korean dish made with soft tofu, vegetables, and a spicy broth.
Ingredients - Serves 4
- Black pepper - To taste

- Green onions - 4, chopped
- Mushrooms - 8 oz, sliced
- Zucchini - 1, sliced
- Sesame oil - 1 tablespoon
- Gochujang (korean red pepper paste) - 2 tablespoons
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, sliced
- Vegetable broth - 4 cups
- Soft tofu - 1 block (14 oz), cubed
Let's Get Started
- In a large pot, heat the sesame oil over medium heat.
- Add the onion, garlic, and ginger. Sauté until fragrant and the onion is translucent.
- Add the vegetable broth, soy sauce, and gochujang. Stir well to combine.
- Bring the broth to a boil, then reduce the heat to low.
- Add the tofu, zucchini, mushrooms, and green onions to the pot. Simmer for 15-20 minutes, or until the vegetables are tender.
- Season with salt and black pepper to taste.
