Shrimp Fried Rice
A quick and easy homemade shrimp fried rice recipe that is far better than takeout.
Ingredients - Serves 4
- Sesame oil - 1 teaspoon
- Green onions - 2, sliced
- Eggs - 2, beaten
- Soy sauce - 3 tablespoons
- Frozen peas and carrots - 1 cup
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Vegetable oil - 2 tablespoons
- Cooked rice - 4 cups
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- Heat 1 tablespoon of oil in a large skillet or wok over medium high heat.
- Add the shrimp and cook until pink, about 2-3 minutes; set aside.
- Add the remaining 1 tablespoon oil to the skillet.
- Add onion and garlic, and cook, stirring often, until onions have become translucent, about 3-4 minutes.
- Stir in peas and carrots, and cook until heated through, about 1-2 minutes.
- Push vegetables to the side, and pour in the beaten eggs, stirring until cooked, about 2 minutes.
- Stir in shrimp, rice, green onions, soy sauce and sesame oil.
- Cook, stirring constantly, until heated through, about 2 minutes.
