Shrimp and Pineapple Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook until pink, about 2-3 minutes per side. Remove from the pan and set aside.
  3. Add the garlic and ginger to the pan and cook for 1-2 minutes, or until fragrant.
  4. Add the carrots and peas and cook for 2-3 minutes, or until the vegetables are tender.
  5. Push the vegetables to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until cooked through, then mix with the vegetables.
  6. Add the cooked rice, soy sauce, and green onions to the pan and stir to combine.
  7. Add the cooked shrimp and diced pineapple to the pan and stir to combine.
  8. Season with salt and pepper to taste.
  9. Cook for an additional 2-3 minutes, or until everything is heated through.
