Shrimp and Pineapple Fried Rice
This delicious fried rice is made with succulent shrimp, sweet pineapple, and a variety of vegetables.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 1/4 cup, chopped
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Sesame oil - 2 tablespoons
- Soy sauce - 3 tablespoons
- Eggs - 2, beaten
- Peas - 1 cup
- Carrots - 1 cup, diced
- Pineapple - 1 cup, diced
- Shrimp - 1 pound, peeled and deveined
- Cooked white rice - 4 cups
Let's Get Started
- Heat the sesame oil in a large skillet or wok over medium-high heat.
- Add the shrimp and cook until pink, about 2-3 minutes per side. Remove from the pan and set aside.
- Add the garlic and ginger to the pan and cook for 1-2 minutes, or until fragrant.
- Add the carrots and peas and cook for 2-3 minutes, or until the vegetables are tender.
- Push the vegetables to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until cooked through, then mix with the vegetables.
- Add the cooked rice, soy sauce, and green onions to the pan and stir to combine.
- Add the cooked shrimp and diced pineapple to the pan and stir to combine.
- Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes, or until everything is heated through.
- Serve hot and enjoy!
