Shchi
Shchi is a traditional Russian cabbage soup made with sauerkraut, vegetables, and meat.
Ingredients - Serves 6
- Sour cream - For serving
- Salt and pepper - To taste
- Dill - 2 tablespoons, chopped
- Bay leaf - 1
- Beef or chicken broth - 4 cups
- Cabbage - 1/2 small head, shredded
- Carrots - 2 medium, peeled and grated
- Onion - 1 large, chopped
- Potatoes - 3 medium, peeled and diced
- Sauerkraut - 2 cups
Let's Get Started
- In a large pot, sauté the onion and carrots in a bit of oil until softened.
- Add the sauerkraut, potatoes, cabbage, broth, bay leaf, salt, and pepper to the pot.
- Bring to a boil, then reduce the heat and simmer for about 40 minutes, or until the vegetables are tender.
- Stir in the chopped dill and adjust the seasoning if needed.
- Serve hot with a dollop of sour cream on top.
