Shanghai fried noodles is a popular Chinese dish made with stir-fried noodles, vegetables, and a savory sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 4, chopped
- Sesame oil - 1 tablespoon
- Oyster sauce - 2 tablespoons
- Soy sauce - 3 tablespoons
- Cabbage - 2 cups, shredded
- Bell peppers - 2, thinly sliced
- Carrots - 2, julienned
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
- Shanghai noodles - 8 ounces
Let's Get Started
- Cook the Shanghai noodles according to package instructions. Drain and set aside.
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and grated ginger to the pan and stir-fry for 1 minute.
- Add the julienned carrots, sliced bell peppers, and shredded cabbage to the pan. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.
- Push the vegetables to one side of the pan and add the cooked noodles to the other side.
- Pour the soy sauce and oyster sauce over the noodles and toss to combine with the vegetables.
- Drizzle the sesame oil over the noodles and season with salt and pepper to taste. Stir-fry for an additional 2-3 minutes.
- Garnish with chopped green onions and serve hot.
