  1. Cut the pork belly into chunks.
  2. Melt the sugar in a pan over low heat until it turns into a caramel color.
  3. Add the pork belly to the pan and increase the heat. Cook until the pork is browned.
  4. Add the Shaoxing wine, light soy sauce, dark soy sauce, water, ginger, star anise, cinnamon stick, and bay leaves.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 2 hours.
  6. Uncover and continue to cook on low heat until the sauce is thickened.
  7. Serve the pork belly with the sauce.
