Set Dosa
Set Dosa is a popular South Indian dish. It's a soft, thick, and fluffy pancake made from a fermented batter of rice and lentils. It's usually served in a set of three, hence the name 'Set Dosa'.
Ingredients - Serves 4
- Oil - For cooking
- Salt - To taste
- Poha (flattened rice) - 1/4 cup
- Fenugreek seeds - 1 teaspoon
- Urad dal - 1/2 cup
- Parboiled rice - 1 cup
- Raw rice - 1 cup
Let's Get Started
- Soak the raw rice, parboiled rice, urad dal, and fenugreek seeds in water for 4-5 hours.
- Drain the water and add the soaked ingredients to a blender. Add the poha and grind to a smooth batter.
- Transfer the batter to a large bowl, add salt, and mix well. Cover and let it ferment for 8-10 hours or overnight.
- After the fermentation, the batter will become fluffy. Stir it well.
- Heat a non-stick pan and pour a ladleful of batter in the center. Do not spread it. Cover and cook on medium heat for a minute.
- Remove the lid, flip the dosa, and cook for another 30 seconds.
- Remove the dosa from the pan and repeat with the remaining batter.
- Serve the set dosa hot with coconut chutney and sambar.
