Set Dosa is a popular South Indian dish. It's a soft, thick, and fluffy pancake made from a fermented batter of rice and lentils. It's usually served in a set of three, hence the name 'Set Dosa'.

Ingredients - Serves 4

Let's Get Started

  1. Soak the raw rice, parboiled rice, urad dal, and fenugreek seeds in water for 4-5 hours.
  2. Drain the water and add the soaked ingredients to a blender. Add the poha and grind to a smooth batter.
  3. Transfer the batter to a large bowl, add salt, and mix well. Cover and let it ferment for 8-10 hours or overnight.
  4. After the fermentation, the batter will become fluffy. Stir it well.
  5. Heat a non-stick pan and pour a ladleful of batter in the center. Do not spread it. Cover and cook on medium heat for a minute.
  6. Remove the lid, flip the dosa, and cook for another 30 seconds.
  7. Remove the dosa from the pan and repeat with the remaining batter.
  8. Serve the set dosa hot with coconut chutney and sambar.
