Seafood Medley Linguine
A delightful mix of shrimp, scallops, and clams tossed with linguine in a light and zesty tomato sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - 1/4 cup, chopped
- Tomatoes - 2 cups, diced
- White wine - 1 cup
- Clams - 1 pound, in shell
- Scallops - 1/2 pound
- Shrimp - 1 pound, peeled and deveined
- Red pepper flakes - 1/2 teaspoon
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons
- Linguine - 1 pound
Let's Get Started
- Cook the linguine according to the package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until fragrant, about 1 minute.
- Add the shrimp, scallops, and clams to the skillet. Cook until the shrimp are pink and the clams have opened, about 5 minutes.
- Add the wine to the skillet and bring to a simmer. Cook for 5 minutes, or until the wine has reduced by half.
- Add the tomatoes to the skillet and cook until they are soft, about 5 minutes.
- Add the cooked linguine to the skillet and toss to combine. Cook for 2-3 minutes, or until the pasta is heated through.
- Season with salt and pepper to taste. Garnish with the chopped parsley before serving.
