Scallion Pancakes

Ingredients - Serves 4

Let's Get Started

  1. In a large bowl, mix the flour and hot water until a dough forms. Knead the dough on a floured surface until smooth, about 5 minutes. Cover with a damp cloth and let rest for 30 minutes.
  2. Divide the dough into 4 equal parts. Roll out one part into a thin circle.
  3. Brush the dough with sesame oil, sprinkle with salt, and scatter the chopped scallions on top.
  4. Roll up the dough into a log, then coil it into a round dough ball. Roll out again into a thin circle.
  5. Repeat with the remaining dough and scallions.
  6. Heat the vegetable oil in a frying pan over medium heat. Fry each pancake until golden brown, about 2 minutes per side.
  7. Cut the pancakes into wedges and serve hot.
