Scallion Pancakes
Crispy, flaky, and with the *slightest* bit of chew, these homemade scallion pancakes are an absolute must-have for any brunch spread.
Ingredients - Serves 4
- Vegetable oil - For frying
- Sesame oil - 2 tablespoons
- Salt - 1 teaspoon
- Scallions - 1 cup, finely chopped
- Hot water - 1 cup
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, mix the flour and hot water until a dough forms. Knead the dough on a floured surface until smooth, about 5 minutes. Cover with a damp cloth and let rest for 30 minutes.
- Divide the dough into 4 equal parts. Roll out one part into a thin circle.
- Brush the dough with sesame oil, sprinkle with salt, and scatter the chopped scallions on top.
- Roll up the dough into a log, then coil it into a round dough ball. Roll out again into a thin circle.
- Repeat with the remaining dough and scallions.
- Heat the vegetable oil in a frying pan over medium heat. Fry each pancake until golden brown, about 2 minutes per side.
- Cut the pancakes into wedges and serve hot.
