Scallion Pancake
A savory, crispy, and flaky Chinese pancake that's delicious as a snack or appetizer.
Ingredients - Serves 4
- Vegetable oil - For frying
- Sesame oil - 2 tablespoons
- Salt - 1 teaspoon
- Scallions - 1 cup, finely chopped
- Hot water - 1 cup
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, mix the flour and hot water until a dough forms. Knead the dough on a floured surface until smooth, then cover and let rest for 30 minutes.
- Divide the dough into four equal parts. Roll out one part into a thin circle.
- Brush the dough with sesame oil, sprinkle with salt, and scatter the chopped scallions on top.
- Roll up the dough into a log, then coil it into a round dough. Roll out again into a thin pancake.
- Heat vegetable oil in a frying pan over medium heat. Fry the pancake until golden brown on both sides, about 2-3 minutes per side.
- Repeat with the remaining dough. Cut the pancakes into wedges and serve hot.
