Russian Tea Cakes
Russian tea cakes, also known as Mexican wedding cookies, are buttery and nutty cookies coated in powdered sugar.
Ingredients - Serves 24
- Powdered sugar (for coating) - 1 cup
- Ground almonds - 1 cup
- All-purpose flour - 2 cups
- Vanilla extract - 1 teaspoon
- Powdered sugar - 1/2 cup
- Butter - 1 cup, softened
Let's Get Started
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the vanilla extract and mix well.
- Gradually add the all-purpose flour and ground almonds to the butter mixture, mixing until well combined.
