Roman Style Artichokes
This is a traditional Roman recipe for artichokes, known as 'Carciofi alla Romana'. The artichokes are stuffed with herbs and garlic, then slowly braised until tender.
Ingredients - Serves 4
- Salt and pepper - To taste
- White wine - 1/2 cup
- Olive oil - 1/4 cup
- Lemon - 1, juiced
- Fresh mint - 1/4 cup, chopped
- Fresh parsley - 1/4 cup, chopped
- Garlic - 4 cloves, minced
- Artichokes - 4 large
Let's Get Started
- Clean the artichokes by removing the outer leaves and trimming the tops. Scoop out the choke if necessary.
- In a bowl, combine the minced garlic, chopped parsley, chopped mint, lemon juice, and half of the olive oil.
- Stuff the artichokes with the herb mixture.
- Heat the remaining olive oil in a large pot over medium heat. Add the artichokes and cook for a few minutes until they start to brown.
- Add the white wine to the pot and cover. Reduce the heat to low and let the artichokes braise for about 20 minutes, or until they are tender.
- Season with salt and pepper to taste before serving.
