Roman Style Artichokes

This is a traditional Roman recipe for artichokes, known as 'Carciofi alla Romana'. The artichokes are stuffed with herbs and garlic, then slowly braised until tender.

Ingredients - Serves 4

Let's Get Started

  1. Clean the artichokes by removing the outer leaves and trimming the tops. Scoop out the choke if necessary.
  2. In a bowl, combine the minced garlic, chopped parsley, chopped mint, lemon juice, and half of the olive oil.
  3. Stuff the artichokes with the herb mixture.
  4. Heat the remaining olive oil in a large pot over medium heat. Add the artichokes and cook for a few minutes until they start to brown.
  5. Add the white wine to the pot and cover. Reduce the heat to low and let the artichokes braise for about 20 minutes, or until they are tender.
  6. Season with salt and pepper to taste before serving.
