Rogan Josh Curry
This classic Indian curry is made with a fragrant blend of spices, tomatoes, and yogurt.
Ingredients - Serves 4
- Salt and pepper - To taste
- Lamb - 1 pound, cubed
- Yogurt - 1/2 cup
- Tomatoes - 2 large, chopped
- Cayenne pepper - 1/2 teaspoon
- Turmeric - 1 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and ginger and cook until the onion is soft, about 5 minutes.
- Add the cumin, coriander, turmeric, and cayenne pepper and cook for 1 minute.
- Add the tomatoes and cook for 5 minutes.
- Add the yogurt and stir to combine.
- Add the lamb and season with salt and pepper. Cook for 10 minutes.
- Reduce the heat to low and simmer for 15 minutes, or until the lamb is cooked through.
- Serve hot with rice or naan.
