Roasted Vegetable Tart

Ingredients - Serves 6
- Salt and pepper - To taste
- Fresh basil - A handful, chopped
- Feta cheese - 1 cup, crumbled
- Garlic - 2 cloves, minced
- Red onion - 1, sliced
- Zucchini - 1, sliced
- Yellow bell pepper - 1, sliced
- Red bell pepper - 1, sliced
- Olive oil - 2 tablespoons
- Egg - 1, beaten
- Puff pastry - 1 sheet
Let's Get Started
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and place it on a baking sheet. Brush it with the beaten egg.
- Heat the olive oil in a pan over medium heat. Add the bell peppers, zucchini, onion, and garlic. Cook until the vegetables are soft and slightly caramelized.
- Spread the cooked vegetables evenly over the puff pastry, leaving a small border around the edges.
- Sprinkle the crumbled feta cheese and chopped basil over the vegetables. Season with salt and pepper.
- Bake the tart in the preheated oven for 20-25 minutes, or until the pastry is golden and the cheese is melted.
