Roasted Garlic and Red Pepper Linguine

Ingredients - Serves 4
- Fresh basil - 1/4 cup, chopped
- Parmesan cheese - 1/2 cup, grated
- Salt and pepper - To taste
- Crushed red pepper flakes - 1/2 teaspoon
- Red bell pepper - 1, roasted and sliced
- Garlic - 6 cloves, roasted and minced
- Olive oil - 2 tablespoons
- Linguine - 1 pound
Let's Get Started
- Preheat the oven to 400°F. Place the garlic and red bell pepper on a baking sheet, drizzle with olive oil, and roast for 20 minutes.
- While the garlic and pepper are roasting, cook the linguine according to the package instructions.
- In a large skillet, heat the olive oil over medium heat. Add the roasted garlic and red pepper, crushed red pepper flakes, salt, and pepper. Cook for 2-3 minutes.
- Drain the linguine, reserving 1 cup of the pasta water. Add the linguine to the skillet and toss to combine.
- If the pasta seems dry, add some of the reserved pasta water.
- Serve the pasta with a sprinkle of grated Parmesan cheese and a garnish of fresh basil.
