Rhubarb and Almond Tart
This delicious tart combines the tangy flavor of rhubarb with the nutty taste of almonds.
Ingredients - Serves 8
- Sliced almonds - 1/4 cup
- Almond extract - 1 teaspoon
- Brown sugar - 1/4 cup
- Rhubarb - 2 cups, sliced
- Egg - 1
- Unsalted butter - 1/2 cup, cold and cubed
- Granulated sugar - 1/2 cup
- Ground almonds - 1/2 cup
- All-purpose flour - 1 1/2 cups
Let's Get Started
- Preheat the oven to 375°F (190°C).
- In a food processor, combine the flour, ground almonds, granulated sugar, and cold cubed butter. Pulse until the mixture resembles coarse crumbs.
- Add the egg and pulse until the dough comes together.
- Press the dough into a tart pan, covering the bottom and sides.
- In a bowl, toss the sliced rhubarb with brown sugar and almond extract.
- Arrange the rhubarb slices on top of the tart dough.
- Sprinkle the sliced almonds over the rhubarb.
- Bake for 40-45 minutes, or until the crust is golden and the rhubarb is tender.
