Apricot Tart
This delicious apricot tart is made with a buttery crust and sweet apricot filling.
Ingredients - Serves 8
- Powdered sugar - For dusting
- Sliced almonds - 2 tablespoons
- Almond extract - 1/2 teaspoon
- Apricot jam - 1/4 cup
- Apricots - 6-8, pitted and sliced
- Salt - 1/4 teaspoon
- Granulated sugar - 1/4 cup
- Unsalted butter - 1/2 cup, cold and cubed
- All-purpose flour - 1 1/2 cups
Let's Get Started
- In a food processor, combine the flour, butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs.
- Add 2-3 tablespoons of cold water and pulse until the dough comes together.
- Transfer the dough to a lightly floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- On a lightly floured surface, roll out the dough into a circle large enough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
- In a small bowl, mix together the apricot jam and almond extract. Spread the mixture evenly over the bottom of the tart crust.
- Arrange the sliced apricots on top of the jam mixture.
- Sprinkle the sliced almonds over the apricots.
- Bake for 35-40 minutes, or until the crust is golden and the apricots are tender.
- Allow the tart to cool before dusting with powdered sugar.
