Red Wine Braised Beef Ribs

  1. Season the beef ribs with salt and pepper.
  2. Heat the olive oil in a large Dutch oven over medium-high heat. Add the ribs and brown on all sides, about 10 minutes. Remove the ribs and set aside.
  3. Add the onion, carrots, and garlic to the Dutch oven and cook until softened, about 5 minutes.
  4. Add the red wine, scraping the bottom of the pan to loosen any browned bits.
  5. Add the beef broth, tomato paste, rosemary, and thyme. Bring to a simmer.
  6. Return the ribs to the Dutch oven, cover, and transfer to a preheated 325°F oven.
  7. Braise for 2.5-3 hours, or until the ribs are tender.
  8. Remove the ribs from the sauce and let rest for a few minutes before serving.
