Red Wine Braised Beef Ribs

Ingredients - Serves 4
- Thyme - 2 sprigs
- Rosemary - 2 sprigs
- Tomato paste - 2 tablespoons
- Beef broth - 2 cups
- Red wine - 2 cups
- Garlic - 4 cloves, minced
- Carrots - 2, chopped
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Beef ribs - 4 pounds
Let's Get Started
- Season the beef ribs with salt and pepper.
- Heat the olive oil in a large Dutch oven over medium-high heat. Add the ribs and brown on all sides, about 10 minutes. Remove the ribs and set aside.
- Add the onion, carrots, and garlic to the Dutch oven and cook until softened, about 5 minutes.
- Add the red wine, scraping the bottom of the pan to loosen any browned bits.
- Add the beef broth, tomato paste, rosemary, and thyme. Bring to a simmer.
- Return the ribs to the Dutch oven, cover, and transfer to a preheated 325°F oven.
- Braise for 2.5-3 hours, or until the ribs are tender.
- Remove the ribs from the sauce and let rest for a few minutes before serving.
