Let's Get Started

  1. Wash the spinach and cook it in a pan with a little water for 5 minutes. Once cooked, drain it well and chop it finely.
  2. In a bowl, mix the spinach with the ricotta, parmesan, eggs, nutmeg, flour, salt, and pepper.
  3. Dust your hands with flour and form the mixture into small balls. Place them on a tray dusted with flour.
  4. Bring a large pot of salted water to a boil. Cook the ravioli nudi for a few minutes, until they float to the surface.
  5. While the ravioli nudi are cooking, melt the butter in a pan and add the sage leaves.
  6. Drain the ravioli nudi and add them to the pan with the butter and sage. Gently toss to coat.
  7. Serve the ravioli nudi with a sprinkling of parmesan cheese.
