Ravioli Nudi
Ravioli Nudi, also known as 'naked ravioli', is a delicious, light dish made with spinach and ricotta cheese. It's a great alternative to traditional pasta.
Ingredients - Serves 4
- Salt and pepper - To taste
- Sage leaves - A handful
- Butter - 50 grams
- Flour - 50 grams, plus extra for dusting
- Nutmeg - A pinch
- Eggs - 2
- Parmesan cheese - 50 grams, grated
- Ricotta cheese - 250 grams
- Spinach - 500 grams
Let's Get Started
- Wash the spinach and cook it in a pan with a little water for 5 minutes. Once cooked, drain it well and chop it finely.
- In a bowl, mix the spinach with the ricotta, parmesan, eggs, nutmeg, flour, salt, and pepper.
- Dust your hands with flour and form the mixture into small balls. Place them on a tray dusted with flour.
- Bring a large pot of salted water to a boil. Cook the ravioli nudi for a few minutes, until they float to the surface.
- While the ravioli nudi are cooking, melt the butter in a pan and add the sage leaves.
- Drain the ravioli nudi and add them to the pan with the butter and sage. Gently toss to coat.
- Serve the ravioli nudi with a sprinkling of parmesan cheese.
