  1. Wash the water spinach thoroughly and cut into 2-inch pieces.
  2. Heat the vegetable oil in a large pan or wok over medium heat.
  3. Add the minced garlic and stir-fry until fragrant and golden brown.
  4. Add the water spinach to the pan and stir-fry for 2-3 minutes until wilted.
  5. In a small bowl, mix together the fish sauce, oyster sauce, sugar, salt, and black pepper.
  6. Pour the sauce mixture over the water spinach and continue to stir-fry for another 2-3 minutes.
  7. Taste and adjust the seasoning if needed.
  8. Remove from heat and serve hot as a side dish with steamed rice or as part of a larger meal.
