Ingredients - Serves 6

Let's Get Started

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the eggplant, zucchini, and bell peppers to the skillet. Cook for 10 minutes, or until the vegetables are slightly tender.
  4. Add the tomatoes, dried thyme, dried oregano, salt, and pepper to the skillet. Stir well to combine.
  5. Reduce the heat to low, cover the skillet, and simmer for 20 minutes, or until the vegetables are fully cooked and flavors are well blended.
  6. In a separate small skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
  7. Add the minced garlic and cook for 1 minute, or until fragrant.
  8. Remove the skillet from heat and stir in the chopped fresh basil.
  9. Pour the garlic and basil mixture over the ratatouille and stir gently to incorporate.
  10. Serve hot as a main course or as a side dish.
