Quinoa Spinach Salad with Lemon Vinaigrette
A refreshing and nutritious salad with quinoa, spinach, and a tangy lemon vinaigrette.
Ingredients - Serves 4
- Salt and pepper - To taste
- Honey - 1 tablespoon
- Olive oil - 1/4 cup
- Lemon - 1, juiced
- Feta cheese - 1/2 cup, crumbled
- Cucumber - 1, diced
- Cherry tomatoes - 1 cup, halved
- Spinach - 4 cups, fresh
- Water - 2 cups
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water until the water runs clear.
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover and simmer until quinoa is tender and the water has been absorbed, about 15 minutes.
- While the quinoa is cooking, prepare the vinaigrette. In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper.
- In a large bowl, combine the cooked quinoa, spinach, cherry tomatoes, cucumber, and feta cheese.
- Pour the vinaigrette over the salad and toss to combine.
- Serve the salad immediately, or refrigerate for up to 2 hours before serving.
