Quinoa Spinach Salad with Lemon Vinaigrette

Let's Get Started

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover and simmer until quinoa is tender and the water has been absorbed, about 15 minutes.
  3. While the quinoa is cooking, prepare the vinaigrette. In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper.
  4. In a large bowl, combine the cooked quinoa, spinach, cherry tomatoes, cucumber, and feta cheese.
  5. Pour the vinaigrette over the salad and toss to combine.
  6. Serve the salad immediately, or refrigerate for up to 2 hours before serving.
