Quinoa Pancakes
These delicious and nutritious quinoa pancakes are made with cooked quinoa, oats, and bananas.
Ingredients - Serves 4
- Fresh berries - For serving
- Maple syrup - For serving
- Salt - 1/4 teaspoon
- Cinnamon - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Milk - 1/2 cup
- Eggs - 2
- Ripe bananas - 2
- Oats - 1/2 cup
- Cooked quinoa - 1 cup
Let's Get Started
- In a blender or food processor, combine the cooked quinoa, oats, bananas, eggs, milk, vanilla extract, baking powder, cinnamon, and salt. Blend until smooth.
- Heat a non-stick skillet or griddle over medium heat.
- Pour 1/4 cup of the batter onto the skillet for each pancake.
- Cook for 2-3 minutes, or until bubbles form on the surface of the pancake.
- Flip the pancake and cook for an additional 2-3 minutes, or until golden brown.
- Repeat with the remaining batter.
