Pumpkin and Chickpea Hotpot
A hearty and healthy hotpot filled with the goodness of pumpkin and chickpeas, perfect for a cozy dinner.
Ingredients - Serves 4
- Salt and pepper - To taste
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Tomatoes - 2, diced
- Vegetable broth - 4 cups
- Chickpeas - 1 can, drained and rinsed
- Pumpkin - 1 small, peeled and diced
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the pumpkin, chickpeas, vegetable broth, tomatoes, cumin, and coriander. Bring to a boil.
- Reduce the heat to low, cover, and simmer for 45 minutes, or until the pumpkin is tender.
- Season with salt and pepper to taste.
- Serve the hotpot warm, garnished with fresh herbs if desired.
