Poulet a La Provencale
Poulet à la Provençale is a classic French dish made with chicken, tomatoes, olives, and herbs.
Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh thyme - 1 tablespoon, chopped
- Fresh basil - 1/4 cup, chopped
- Black olives - 1/2 cup, pitted
- Tomatoes - 4, diced
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Chicken thighs - 4
Let's Get Started
- Season the chicken thighs with salt and pepper.
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and minced garlic. Cook until the onion is soft and translucent, about 5 minutes.
- Add the diced tomatoes, black olives, fresh basil, and fresh thyme to the skillet. Season with salt and pepper.
- Return the chicken thighs to the skillet and nestle them into the tomato mixture.
