- Salt and pepper - To taste
- Bay leaf - 1
- Fresh thyme - 1 tablespoon, chopped
- Vegetable broth - 4 cups
- Tomatoes - 2, diced
- Green beans - 1 cup, trimmed and halved
- Zucchini - 2, sliced
- Potatoes - 2, peeled and diced
- Carrots - 2, sliced
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
- Add the carrots, potatoes, zucchini, green beans, tomatoes, vegetable broth, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the vegetables are tender.
- Remove the bay leaf before serving.
- Serve hot and enjoy!
