Potato and Cheese Stuffed Bell Peppers
These delicious bell peppers are stuffed with a flavorful mixture of mashed potatoes and melted cheese.

- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Garlic powder - 1 teaspoon
- Green onions - 4, chopped
- Cheddar cheese - 1 cup, shredded
- Potatoes - 4 large, peeled and diced
- Bell peppers - 6
Let's Get Started
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Place the bell peppers in a baking dish and set aside.
- Boil the diced potatoes in a pot of salted water until tender, about 15 minutes.
- Drain the potatoes and transfer them to a mixing bowl.
- Mash the potatoes with a fork or potato masher until smooth.
- Add the shredded cheddar cheese, chopped green onions, garlic powder, salt, and pepper to the mashed potatoes. Mix well to combine.
- Spoon the potato and cheese mixture into the hollowed-out bell peppers.
