Porkkanalaatikko
Porkkanalaatikko is a traditional Finnish dish made with carrots, rice, and ground pork. It is a hearty and comforting casserole that is perfect for cold winter days.
Ingredients - Serves 6
- Butter - 2 tablespoons
- Nutmeg - 1/4 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Milk - 1/2 cup
- Bread crumbs - 1/2 cup
- Egg - 1
- Onion - 1, finely chopped
- Rice - 1 cup, uncooked
- Ground pork - 500g
- Carrots - 500g, grated
Let's Get Started
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the grated carrots, ground pork, rice, chopped onion, egg, bread crumbs, milk, salt, black pepper, and nutmeg. Mix well.
- Grease a casserole dish with butter.
- Transfer the carrot and pork mixture into the casserole dish and spread it evenly.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden brown.
- Let the porkkanalaatikko cool for a few minutes before serving.
