Pork Tenderloin with Roasted Apples and Onions

  1. Preheat the oven to 400°F.
  2. In a large roasting pan, toss the apples and onions with the olive oil, salt, and pepper.
  3. Roast for 15 minutes, or until the apples and onions are starting to soften.
  4. While the apples and onions are roasting, season the pork tenderloin with salt, pepper, and rosemary.
  5. Remove the roasting pan from the oven and push the apples and onions to the sides. Place the pork tenderloin in the center of the pan.
  6. In a small bowl, mix together the Dijon mustard and honey. Brush this mixture over the pork tenderloin.
  7. Return the roasting pan to the oven and roast for another 25-30 minutes, or until the pork is cooked through.
  8. Let the pork rest for a few minutes before slicing and serving with the roasted apples and onions.
