Pork Chops with Blackberry Sauce

Ingredients - Serves 4
- Thyme - 1 teaspoon, fresh
- Honey - 2 tablespoons
- Balsamic vinegar - 1/4 cup
- Blackberries - 2 cups
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Pork chops - 4, bone-in
Let's Get Started
- Season the pork chops with salt and pepper.
- Heat the olive oil in a large skillet over medium heat. Add the pork chops and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the garlic and cook until fragrant, about 1 minute.
- Add the blackberries, balsamic vinegar, honey, and thyme. Cook until the blackberries are soft and the sauce has thickened, about 10 minutes.
- Return the pork chops to the skillet and spoon the blackberry sauce over them. Cook for an additional 5 minutes, or until the pork chops are cooked through.
- Serve the pork chops with the blackberry sauce.
