Plum Cake
A delicious and moist cake made with fresh plums and a hint of cinnamon.
Ingredients - Serves 8
- Milk - 1/2 cup
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Granulated sugar - 1 cup
- Unsalted butter - 1/2 cup, softened
- Ground cinnamon - 1 teaspoon
- Salt - 1/2 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 2 cups
- Fresh plums - 2 cups, pitted and sliced
Let's Get Started
- Preheat the oven to 350°F and grease a 9-inch cake pan.
- In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In a large bowl, beat the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla.
- Gradually mix in the flour mixture, alternating with the milk, beginning and ending with the flour. Fold in the plums.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
