Piperade

- Espelette pepper - 1 teaspoon
- Salt and pepper - To taste
- Eggs - 4
- Tomatoes - 2 large, diced
- Garlic - 2 cloves, minced
- Bell peppers - 2, thinly sliced
- Onions - 1 large, thinly sliced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onions and bell peppers and cook until they are soft and starting to brown, about 10 minutes.

- Add the tomatoes and cook until they are soft and have released their juices, about 10 minutes.
