Pinto Bean and Beef Tamale Pie
This delicious tamale pie is made with a flavorful mixture of pinto beans, ground beef, and corn, topped with a cornmeal crust.
Ingredients - Serves 6
- Cheddar cheese - 1 cup, shredded
- Egg - 1
- Milk - 1 cup
- Baking powder - 1 teaspoon
- All-purpose flour - 1/2 cup
- Cornmeal - 1 cup
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Chili powder - 1 tablespoon
- Tomato sauce - 1 can (8 ounces)
- Corn - 1 cup, frozen or canned
- Pinto beans - 1 can (15 ounces), drained and rinsed
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Ground beef - 1 pound

- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and cooked through.
- Add the pinto beans, corn, tomato sauce, chili powder, cumin, salt, and pepper to the skillet. Stir well to combine and simmer for 5 minutes.
- In a separate bowl, whisk together the cornmeal, flour, baking powder, milk, and egg until smooth.
- Pour the beef and bean mixture into a greased 9-inch pie dish. Spread it evenly.

- Sprinkle the shredded cheddar cheese on top of the cornmeal batter.
- Bake in the preheated oven for 30-35 minutes, or until the cornmeal crust is golden brown and the filling is bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
