  3. Gradually add the granulated sugar, cornstarch, and white vinegar while continuing to beat until the mixture is glossy and holds its shape.
  4. Spoon the meringue mixture onto the prepared baking sheet, forming a round shape with slightly raised edges.
  5. Bake for 1.5 hours, or until the meringue is crisp and dry. Turn off the oven and let it cool completely inside.
  6. In a separate bowl, whip the whipping cream and powdered sugar until soft peaks form.
  7. Spread the whipped cream over the cooled meringue base.
  8. Top with diced fresh pineapple and garnish with mint leaves.
