Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 350°F (175°C).
  2. In a small saucepan, combine the canned pineapple chunks and 1/4 cup of water. Cook over medium heat until the pineapple is soft and the water has evaporated. Remove from heat and let it cool.
  3. In a blender, combine the cooked pineapple, granulated sugar, eggs, evaporated milk, sweetened condensed milk, and vanilla extract. Blend until smooth.
  4. Pour the mixture into a flan mold or individual ramekins.
  5. Place the flan mold or ramekins in a larger baking dish. Fill the larger dish with hot water, about halfway up the sides of the flan mold or ramekins.
  6. Bake for 45-60 minutes, or until the flan is set but still slightly jiggly in the center.
  7. Remove from the oven and let it cool to room temperature. Then refrigerate for at least 2 hours, or overnight, to fully set.
  8. To serve, run a knife around the edges of the flan mold or ramekins to loosen the flan. Invert onto a serving plate, allowing the caramel sauce to drizzle over the flan.
  9. Slice and serve chilled. Enjoy!
