Pineapple Flan
This creamy and tropical pineapple flan is a delightful dessert that combines the richness of flan with the sweetness of pineapple.
Ingredients - Serves 6
- Water - 1/4 cup
- Vanilla extract - 1 teaspoon
- Sweetened condensed milk - 1 can (14 oz)
- Evaporated milk - 1 can (12 oz)
- Eggs - 4
- Granulated sugar - 1 cup
- Canned pineapple chunks - 1 cup
Let's Get Started
- Preheat the oven to 350°F (175°C).
- In a small saucepan, combine the canned pineapple chunks and 1/4 cup of water. Cook over medium heat until the pineapple is soft and the water has evaporated. Remove from heat and let it cool.
- In a blender, combine the cooked pineapple, granulated sugar, eggs, evaporated milk, sweetened condensed milk, and vanilla extract. Blend until smooth.
- Pour the mixture into a flan mold or individual ramekins.
- Place the flan mold or ramekins in a larger baking dish. Fill the larger dish with hot water, about halfway up the sides of the flan mold or ramekins.
- Bake for 45-60 minutes, or until the flan is set but still slightly jiggly in the center.
- Remove from the oven and let it cool to room temperature. Then refrigerate for at least 2 hours, or overnight, to fully set.
- To serve, run a knife around the edges of the flan mold or ramekins to loosen the flan. Invert onto a serving plate, allowing the caramel sauce to drizzle over the flan.
- Slice and serve chilled. Enjoy!
