Pea and Egg Fried Rice
This delicious pea and egg fried rice is a quick and easy dish that is perfect for a weeknight dinner.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 4, chopped
- Garlic - 2 cloves, minced
- Vegetable oil - 2 tablespoons
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Eggs - 3
- Frozen peas - 1 cup
- Cooked rice - 4 cups
Let's Get Started
- In a small bowl, beat the eggs with a pinch of salt and pepper.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
- Add the beaten eggs to the skillet and scramble until cooked through. Remove from the skillet and set aside.
- In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium-high heat.
- Add the minced garlic and chopped green onions to the skillet and sauté for 1-2 minutes.
- Add the frozen peas to the skillet and cook for another 2-3 minutes, until heated through.
- Add the cooked rice to the skillet and stir-fry for 3-4 minutes, breaking up any clumps.
- Drizzle the soy sauce and sesame oil over the rice and stir to combine.
- Add the scrambled eggs back to the skillet and toss everything together until well mixed.
- Season with salt and pepper to taste.
