Pato No Tucupi
Pato no Tucupi is a traditional Brazilian dish from the Amazon region. It's made with duck cooked in tucupi, a sauce made from wild manioc root juice.
Ingredients - Serves 4
- Chili pepper - 1, chopped
- Jambu leaves - 1 bunch
- Black pepper - To taste
- Salt - To taste
- Garlic - 4 cloves, minced
- Tucupi - 4 cups
- Duck - 1 whole
Let's Get Started
- Clean the duck and cut it into pieces.
- Season the duck with garlic, salt, and black pepper.
- In a large pot, bring the tucupi to a boil and add the duck pieces.
- Cook for about 2 hours, or until the duck is tender.
- In a separate pot, blanch the jambu leaves in boiling water.
- Add the blanched jambu leaves and chopped chili pepper to the pot with the duck and tucupi.
- Cook for an additional 10 minutes.
- Serve the Pato no Tucupi hot, with rice on the side if desired.
