  1. Boil the diced potatoes in a large pot of salted water until tender, about 15 minutes.
  2. While the potatoes are boiling, prepare the chuchoca by combining the cornmeal, milk, butter, salt, and pepper in a separate bowl.
  3. Drain the cooked potatoes and return them to the pot. Mash them with a potato masher or fork until smooth.
  4. Add the chuchoca mixture to the mashed potatoes and mix well.
  5. Place the pot over low heat and cook for an additional 5 minutes, stirring constantly, until the mixture thickens.
  6. Remove from heat and stir in the chopped cilantro.
  7. Serve hot as a side dish with your favorite main course.
