Papas Con Chuchoca
Papas con Chuchoca is a traditional Chilean dish made with mashed potatoes and cornmeal.
Ingredients - Serves 6
- Fresh cilantro - 2 tablespoons, chopped
- Pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Butter - 2 tablespoons
- Milk - 1/2 cup
- Cornmeal - 1 cup
- Potatoes - 6 medium-sized, peeled and diced
Let's Get Started
- Boil the diced potatoes in a large pot of salted water until tender, about 15 minutes.
- While the potatoes are boiling, prepare the chuchoca by combining the cornmeal, milk, butter, salt, and pepper in a separate bowl.
- Drain the cooked potatoes and return them to the pot. Mash them with a potato masher or fork until smooth.
- Add the chuchoca mixture to the mashed potatoes and mix well.
- Place the pot over low heat and cook for an additional 5 minutes, stirring constantly, until the mixture thickens.
- Remove from heat and stir in the chopped cilantro.
- Serve hot as a side dish with your favorite main course.
