Pancit Bihon
Pancit Bihon is a Filipino stir-fried noodle dish made with rice noodles, meat, and vegetables.
Ingredients - Serves 6
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Lemon - 1, juiced
- Chicken broth - 1 cup
- Fish sauce - 2 tablespoons
- Soy sauce - 3 tablespoons
- Green beans - 1/2 cup, sliced
- Cabbage - 1/2 small head, shredded
- Carrots - 2, julienned
- Onion - 1, sliced
- Garlic - 4 cloves, minced
- Shrimp - 1/2 pound, peeled and deveined
- Chicken breast - 1, boneless and sliced
- Rice noodles (bihon) - 8 ounces
Let's Get Started
- Soak the rice noodles in warm water for 10 minutes, then drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium-high heat.
- Add the garlic and onion, and sauté until fragrant and translucent.
- Add the chicken and shrimp, and cook until they are cooked through.
- Push the meat to one side of the pan and add the carrots, cabbage, and green beans. Stir-fry for a few minutes until the vegetables are slightly tender.
- Add the soaked rice noodles to the pan, followed by the soy sauce, fish sauce, and chicken broth. Toss everything together until well combined.
- Continue cooking for another 5-7 minutes, or until the noodles are cooked and the flavors have melded together.
- Season with salt and pepper to taste.
- Remove from heat and squeeze fresh lemon juice over the pancit bihon.
- Serve hot and enjoy!
