Pancetta Wrapped Asparagus
This is a simple yet elegant side dish. Asparagus spears are wrapped in a sheath of pancetta, then roasted until crispy. A great dish to make ahead, and bake just before serving.

- Salt and pepper - To taste
- Olive oil - 1 tablespoon
- Pancetta - 16 slices
- Asparagus - 16 spears
Let's Get Started
- Preheat your oven to 450°F (230°C).
- Trim the woody ends from the asparagus spears.
- Wrap each asparagus spear in a slice of pancetta. Place on a baking sheet.
- Drizzle the asparagus and pancetta with olive oil, then season with salt and pepper.
- Roast in the preheated oven for 12-15 minutes, or until the pancetta is crispy and the asparagus is tender.
- Serve immediately.
