Onion and Mushroom Grilled Cheese
This delicious grilled cheese sandwich is filled with caramelized onions, sautéed mushrooms, and melted cheese.
Ingredients - Serves 2
- Salt and pepper - To taste
- Cheddar cheese - 4 slices
- Bread - 4 slices
- Mushrooms - 8 ounces, sliced
- Onion - 1 large, thinly sliced
- Butter - 2 tablespoons
Let's Get Started
- Heat 1 tablespoon of butter in a skillet over medium heat.
- Add the sliced onions and cook until caramelized, about 10 minutes. Remove from the skillet and set aside.
- In the same skillet, melt the remaining tablespoon of butter.
- Add the sliced mushrooms and cook until they release their moisture and become golden brown, about 5 minutes. Season with salt and pepper.
- Remove the mushrooms from the skillet and set aside.
- Spread butter on one side of each bread slice.
- Place two slices of bread, buttered side down, on a clean surface.
- Layer each slice with a slice of cheddar cheese, caramelized onions, sautéed mushrooms, and another slice of cheddar cheese.
- Top with the remaining bread slices, buttered side up.
- Heat a skillet or griddle over medium heat.
- Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
- Remove from the skillet and let cool for a few minutes before serving.
- Slice the sandwiches in half and serve hot.
