Onion and Mushroom Grilled Cheese

Let's Get Started

  1. Heat 1 tablespoon of butter in a skillet over medium heat.
  2. Add the sliced onions and cook until caramelized, about 10 minutes. Remove from the skillet and set aside.
  3. In the same skillet, melt the remaining tablespoon of butter.
  4. Add the sliced mushrooms and cook until they release their moisture and become golden brown, about 5 minutes. Season with salt and pepper.
  5. Remove the mushrooms from the skillet and set aside.
  6. Spread butter on one side of each bread slice.
  7. Place two slices of bread, buttered side down, on a clean surface.
  8. Layer each slice with a slice of cheddar cheese, caramelized onions, sautéed mushrooms, and another slice of cheddar cheese.
  9. Top with the remaining bread slices, buttered side up.
  10. Heat a skillet or griddle over medium heat.
  11. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
  12. Remove from the skillet and let cool for a few minutes before serving.
  13. Slice the sandwiches in half and serve hot.
